Makes 28 cookies
1 ½ cup flour
1 cup sugar
1 tbs ground cardamom
¾ cup corn oil
pistachio's, finely ground or very finely chopped
Line a baking sheet with baking paper. Preheat the oven to 350°F.
Mix the flour, sugar and cardamom together in a mixing bowl. Add the corn oil and mix well. Roll into 1 ½ in balls and place on the baking sheet. Bake for 15 minutes (cookies will barely brown). Sprinkle with pistachios while the cookies are hot. Allow to cool on the baking sheet.
