• • 3.5 oz. softened unsalted butter
• • 6 heaping Tbsp flour
• • 12 Tbsp rolled oats
• • 1 medium egg
• • 1 tsp vanilla extract
• • 4 Tbsp brown sugar
• • 4 Tbsp golden raisins
• • 4 heaping Tbsp Nutella
• • 4 Tbsp of coarsely chopped organic walnuts
• • 1.75 oz. dark chocolate – coarsely chopped
• • 1 tsp baking powder
• • 2/3 tsp salt
Preheat oven to 360F and line two pans or baking sheets with parchment paper.
In a medium bowl mix together butter, egg, Nutella, raisins and vanilla. In a different bowl mix together flour, baking powder, oats, brown sugar, chopped walnuts and salt. Add the dry ingredients in the first bowl and give it a good stir using a spatula.
Toss in the chopped chocolate and give it another quick stir.
Drop the dough on the lined cookie sheets using a spoon, leaving about 2 inches space between cookies. Using the heel of your hand press the dough gently until the cookies are about 1/2 inch thick.
Bake for about 14-16 minutes.
Gently transfer the cookies to cooling racks to cool.
Makes 20 cookies.
