HONEY ROASTED EGGPLANT

3 medium sized eggplants, cubed
2 Serrano chilies, sliced
1/4 cup honey
2 tablespoons vegetable oil
Preheat the oven to 425 F. Toss all ingredients together in a baking dish and roast eggplant for about half an hour, tossing half way.
