HAND-CUT NOODLES

1/2 cup water
2 cups bread flour

Add water to the mixing bowl of a stand mixer with the flat paddle attached. Adding 1/2 cup of flour at a time, mix on low speed until the dough comes together to form a ball.
Knead the dough on a flour covered board until the dough forms a smooth, hard ball.
Wrap the dough in plastic wrap and set aside for one hour.
Bring a large pot of water to boil.
Using a heavy rolling pin, roll out the dough on a flour covered board until it has formed a thin sheet.
Cut the sheet into thin noodles and toss with some flour to prevent them from sticking together.
Add salt to the boiling water and then add the noodles, one cup at a time.
Cook the noodles in the boiling water until they rise to the surface and are done, about four minutes.
Remove noodles from the boiling water using a spider strainer and add to your favorite stir fry or soup.
