SOURDOUGH PANCAKES

1 cup sourdough starter
1 ½ cups warm water
1 ½ cups all-purpose flour
1 cup whole wheat flour
1 egg
2/3 cup milk
1 teaspoon baking soda
1 teaspoon salt
3 tablespoons brown sugar
2 tablespoons vegetable oil or melted butter
Butter for greasing the griddle

The night before you make pancakes:
Mix the sourdough starter, warm water, and flours in a large bowl. Cover with plastic wrap and let stand overnight in a warm spot.

On pancake making day:
Mix egg, milk, baking soda, salt, brown sugar and oil or melted butter. Whisk into the mixture from the night before, let stand for five minute and drop onto greased griddle.
