2 1/2 cups water
Rinse the rice in a strainer at least 3 times until the water runs clear.
Place the washed rice in a bowl and add enough water to cover. Soak for 15 minutes.
Boil 2 1/2 cups of water in a pot.
Drain the soaked rice completely.
Add the drained rice to the boiling water.
Bring the water to a boil again, reduce heat to a low simmer and cover. Simmer for 5 minutes.
DO NOT REMOVE THE COVER FROM THE POT.
Remove the pot from the fire and allow the pot to sit, undisturbed, for 15 minutes.
Fluff and serve.
